Heirloom Tomato, Basil, Mozzarella Salad

The classic Caprese Salad has cherry tomatoes, neatly sliced basil, mozzarella balls or precisely sliced rounds, and a dainty drizzle of olive oil and balsamic vinegar.

I changed up that classic version into this more rustic variation, and it is the easiest, fastest salad and has found it's way into our weekly summer dinner rotation. 

You will need:

heirloom tomatoes

basil

fresh mozzarella 

salt & pepper

and the key player: this balsamic glaze from Trader Joe's

1. Start by slicing the tomatoes and throw them into a bowl

2. Rip the mozzarella into pieces, or slice if you prefer. Add to the bowl

3. Rip or slice the basil. Add. 

Drizzle the whole thing with the balsamic glaze and then salt and pepper. No extra olive oil necessary. I'm sure you could DIY the balsamic glaze and make your own reduction, but this method is too easy for me to pass up.

Love this summer salad. There are a thousand ways to make Caprese and I love the simplicity of this one.
